Vegan, Gluten-Free Chocolate Chip Cookies

115g Vegan Butter (Stork or any Superstore own branded one)
150g Granulated Sugar
Optional: 100g Unrefined Sugar and/or 100g coconut sugar).
2 tsp vanilla extract
30ml plant milk (we use coconut milk as its the most allergy friendly for our family).
250g gluten-free flour blend
10g Brown rice flour
1 tsp baking soda
1/4 tsp salt
150g chocolate chips (or your choice of mix-ins)
Instructions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, mix the vegan butter, sugar, and vanilla until creamy.
Add in the gluten-free flour, brown rice flour, baking soda, and salt. Mix until well combined.
Fold in your mix-ins – chocolate chips, ginger bites, freeze-dried fruits, or nuts – whichever tickles your taste buds.
Slowly add in your plant milk. Be careful here as you may not need it all. You are looking for a slightly sticky dough.
Use a spoon, ice cream scoop or your hands to shape cookie dough into balls and place them on the baking sheet. Flatten slightly.
Bake for 12 - 15 minutes, or until the edges are golden.
Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
