Vegan, Gluten-Free Carrot Cake
Ingredients:
Makes an 8 inch sandwich cake.
Servings: 8 people
Carrot Cake
22g Brown rice flour
405g gluten-free plain flour
225ml sunflower oil
2 flax eggs
- 2 tbsp flax seeds
- 35ml warm orange juice
450g brown sugar
560g soya milk
1 1/4 tsp baking powder
1 1/4 tsp xanthan gum
1 tsp bicarbonate soda
1 1/4 table spoon cider vinegar
200g grated carrots
1 tbsp mixed spices (cinnamon, ginger, nutmeg)
1 tbsp nut-free brittle (optional)
Cream Cheese Frosting
250g vegan cream cheese
150g softened vegan butter
600g icing sugar
1 tsp vanilla extract
zest of 1 lemon
Instructions:
Preheat your oven to 350°F (175°C) and prepare your cake pans with parchment paper.
Combine the flax seeds with the orange juice and set aside to thicken while you prepare the other ingredients.
Mix together the soya milk and cider vinegar in a jug and place somewhere warm.
In a bowl, whisk together the sugar with the oil until well incorporated. Add in the flax eggs.
Gently fold in the dry ingredients into the sugar mix until they become a harmonious blend.
Slowly add the milk and cider vinegar mixture to your bowl and beat the batter until smooth. Fold in the grated carrots.
Sprinkle in your prized seeded brittle mix for that unforgettable crunch.
Pour your batter into the prepared cake pans, spreading the love evenly.
Bake for 45 - 50 minutes.
To make the cream cheese frosting:
Using a stand mixer, whisk the vegan butter for around 5 mins until it becomes light in colour and fluffy.
Add the vegan cream cheese, lemon zest and vanilla extract and whisk for a further 2 mins on high speed.
Reduce the speed on the stand mixer and add in the icing sugar a cup at a time. I like to mix it by hand with a spatula first before using the stand mixer to minimise the mess and clean up!
Once the icing sugar is incorporated, set your stand mixer to high speed and whisk for around 5 mins until you get a velvety smooth frosting.
Let your cakes cool and use the cream cheese frosting to layer and decorate your cake.
