The Butternut Blondie has truly captured the hearts and taste buds of our customers. Time and again, it has claimed the title of superstar as our top-selling item. The original recipe was created as a friend of mine does not like "milk" chocolate (shock!) but is a fan of white chocolate so I adapted our chocolate brownie to suit. Now, it is our most loved brownie with its irresistible combination of flavours, moistness and fudge like texture and the ultimate go-to for those with various dietary needs. It's not just a dessert; it's a masterpiece that's here to stay.

So here's your chance to sprinkle a little bakery magic in your own kitchen! Butternut Blondie Brownie- vegan, gluten-free, diary-free, nut free
Ingredients:
90g self-raising gluten-free flour (We use Doves Farm Freee)
10g Brown rice flour
¼ tsp. baking powder
80g unrefined sugar (coconut sugar is a good choice)
50g butternut squash puree
Vanilla extract
A pinch of Salt
30g melted cocoa butter
25g vegan margarine
100ml coconut milk
50ml orange juice
60g vegan white chocolate
Freeze dried raspberry crumbs
Directions
Preheat your oven to 200°C and line a small baking tray with parchment paper.
Cut up 50g of butternut squash into cubes and gently roast until tender for 20 mins. Don't throw away the seeds! Keep them to make your very own nut free brittle snacks, or add to granola.
While the butternut is in the oven, prepare your other ingredients.
In a bowl, mix together your flour, baking powder, sugar and salt. Put this to one side.
In another bowl, gently melt your cocoa butter over a bain-marie. When this has completely melted remove from the heat and add your vegan margarine and then your coconut milk and vanilla extract. Leave to stand for 5 mins.
Remove the butternut squash from the oven and blend together with the orange juice either using a food processor or an electric hand blender.
Reduce the heat in the oven to 180°C and line a baking tin with parchment paper.
Now we have to mix everything together!
To the bowl of dry ingredients, add your butternut squash puree and the coconut milk mixture.
Mix together until you get a silky smooth, golden batter and pour into your baking tin. Bake for 20 - 30 mins until you get a golden crumb topping and the most delicious smell.
Leave to cool in the tin for 5 mins and then remove to cool further on a wire rack.
You can enjoy as is or to elevate even further, smother with vegan white chocolate and freeze dried raspberry crumbs.
