Simply Delicious Vegan Brownies

When you're craving a chocolate hit and you have little time, this recipe is a must have. You could be sitting at the table indulging yourself with these delectable treats in 30 mins, and yes that also includes doing the washing up!


It is a one pot, stick everything in kind of recipe, which works beautifully as a stand alone or can be used as a base recipe for more elaborate treats.


As you will see, the recipe is free from all major allergens and the items are readily available from the local supermarket. The perfect tasty treat for everyone.


Simply Delicious Chocolate Brownies


Yield: 9 Servings

Time: 30 mins


Equipment


  • Baking tin of choice - we like to use a 20cm square tin.

  • Stainless Steel bowl.

  • Kitchen Whisk - it is really easy to whisk by hand, but you could also use an electric one if preferred.

  • Kitchen Scale

  • Glass Jug

  • Parchment paper


Ingredients:


  • 40g Hot chocolate mix - we use our own blend which is available in the store online. But you can use your favourite blend. This is a good way to introduce different flavours if you have a flavoured hot chocolate mix.

  • 70g Self Raising Gluten-Free Flour - we use Dove's Farm.

  • 1/4 tsp. gluten-free baking powder.

  • 50g unrefined cane sugar

  • 30g dark chocolate - broken down into chunks

  • 25g vegan margarine

  • 100ml of dairy free milk (we like to use KOKO)




Optional extras:

  • 1 tsp instant coffee

  • 20g chocolate chips

  • Any other items you want to through in there! - Edible of course. We use pureed vegetables to add extra moisture and flavour.

Method:


  1. Line your baking tin with parchment paper. It makes it so much easier to get the brownies out later and also easier to clean! I like to use clips to hold the paper in place.

  2. Heat up the dark chocolate, vegan margarine (and coffee granules if using) in the glass jug for 30 seconds. Place this to one side to allow the chocolate to melt.

  3. Sift and mix all the dry ingredients (hot chocolate mix, gluten-free flour, baking powder, sugar and chocolate chips if using), together into one bowl and create a well in the middle.

  4. Add the wet ingredients (chocolate mix and dairy-free milk) into the middle and mix well to create a smooth batter.

  5. Spread the mixture evenly into the baking tin.

  6. Bake in the oven at 170 degrees for 12 mins. - It should still be a little gooey on the inside. It will continue to bake for a few more minutes after you take it out of the oven.

  7. Leave to cool for 5 mins. Then either indulge straight away, or allow to cool further and decorate with additional melted chocolate and other treats.

TIP: Use parchment paper on top of your mixture to get a flatter bake.
