Decadently Delicious: The Best Vegan Vanilla Buttercream Recipe

Buttercream frosting is literally the icing on the cake of any dessert, adding a velvety, sweet touch that elevates your cakes, cupcakes, and cookies to new heights. And for those embracing a vegan lifestyle or looking for dairy-free alternatives, fear not! I usually start by making my frosting first and putting it straight into a pipping bag ready to use later. This way, if I am baking on the same day, I can use the bowl to make the batter or if I have a larger bake, I can break down the tasks.


Ingredients:


To create this delectable vegan vanilla buttercream, gather the following ingredients:

Vegan Buttercream frosting

  • 200g vegan butter (room temperature)

  • 400g icing sugar (sifted) - you can also use a sugar free alternative like erythritol if required

  • 1/2 tsp vanilla paste

  • A pinch of salt

  • 2 - 3 tablespoons plant-based milk (optional)



Method


1. Start by creaming your vegan butter with an electric mixer for at least 5 - 10 mins to get a smooth consistency. It does sound like a long time but this is crucial as it helps incorporate air into the butter and lightens the colour to give you the perfect texture and the classic soft hue of a vanilla butter cream that we are used to.


2. Gradually add the vanilla paste and continue beating for 2 more minutes. Try and use one made with real vanilla beans as this leaves a beautiful speckled effect on the finished buttercream.


3. Slowly add the icing sugar one cup at a time. Allow each addition to mix in properly before adding the next cup. It may take a bit more time, but it will save you cleaning time later 😉.

4. Once the powdered sugar is fully mixed in, add a pinch of salt to enhance the flavour. Taste and see if you need to adjust the sweetness.


5. I like swap the paddle attachment for a whisk attachment and beat for a further 5 mins. I find that this lightens the buttercream even more and makes it super fluffy. Now you can add the plant-based milk to adjust the consistency if you required. Beat until the frosting becomes smooth and creamy.


6. Use a rubber spatula to scoop out the buttercream and transfer to a piping bag ready to be used to decorate your vegan desserts.
