A Year in Reflection: Celebrating Growth, Community, and Gluten-Free Delights in Romford and Beyond


As another year comes to a close, I can’t help but reflect on the journey of our bakery, Marisola Parlour and the milestones that have shaped it. What began as a passion for creating plant-based, gluten-free, and allergen-friendly treats for myself and my family, has blossomed into something that brings joy to the local community, full of shared moments, growth, and the joy of serving those who thought they’d never find their perfect treat.

Building Our Roots at Romford Market


One of the most rewarding steps this year has been regularly visiting Romford Market. Hearing customers call me the “gluten-free lady” is a title I wear with pride! Establishing a small but loyal customer base has been a true highlight. It’s not just about selling cupcakes, brownies, or fruit tarts; it’s about creating connections. Meeting customers who have spent years unable to find desserts that cater to their needs, and seeing the sheer excitement on their faces when they try a sample, has been priceless.


There’s a beautiful sense of community at the market. From loyal supporters who stop by weekly to generous customers who buy extra to share with friends and family, the kindness and enthusiasm have been beyond encouraging. These moments remind me why I bake: to ensure that no one feels left out when it comes to enjoying delicious and beautiful desserts.

Expanding Our Gluten-Free Range: Something New for Everyone


This year, I pushed myself to expand our menu to offer even more choice for those with specific dietary needs. Some standout additions include:


  • Fruit Tarts: Not just gluten-free, but some completely free of the top 14 allergens. Unique flavours like Blackberry Acai and Lemon Poppy Seed with a delicate poppy seed brittle have been firm favourites.

  • Cupcakes and Cake Slices: The response to our Mango Vanilla Cupcakes has been overwhelming. A fluffy vanilla cupcake filled with a mango and passionfruit coulis centre, topped with vanilla bean vegan buttercream and sprinkled with coconut shreds — a treat that has captured hearts and taste buds alike.

  • Brownie Bites: Always a hit, these rich, chocolatey bites have been a go-to for those looking for something portable and indulgent.




Alongside the baked treats, I’ve expanded our offerings with a range of drink blends, including the latest batch of Yirgacheffe Coffee. These blends, along with our postable Afternoon Tea Box, were created to bring a taste of Marisola Parlour into homes beyond our local area. Whether enjoyed with a brownie in the comfort of home or shared as a thoughtful gift, these additions ensure there’s something for everyone to savour.





Milestones Worth Celebrating


We also marked some exciting milestones this year. Our 4th birthday celebration was a special moment, not just for the bakery but for me personally. From launching festive treats to receiving heart-warming feedback, it felt like a culmination of years of dedication, learning, and growth.

Additionally, we’ve had the privilege of attending corporate venues to showcase our desserts, introducing even more people to the world of gluten-free, plant-based delights. Hearing positive feedback and seeing people go back for seconds was a true confidence boost.



Challenges, Growth, and Personal Lessons


Looking back, this year hasn’t been without its challenges. Baking 10 different desserts in a small space and under tight timeframes — all to create variety for the market — has stretched me beyond what I thought I could do. But this experience has made me more efficient, creative, and determined to ensure everyone has options, regardless of their allergies or dietary needs.


On a personal note, I’ve also stepped outside my comfort zone. From exploring new places to meeting people who have supported this journey, I’ve grown alongside the bakery. Seeing how much joy our cakes and desserts bring reminds me of the purpose behind what I do: offering tasty, beautiful, and inclusive treats for everyone.

While it’s been a year full of milestones, I’m already excited for what’s to come. Here’s a little peek at what you can expect in the year ahead:
